Salad Pizza

Fresh veggies atop a tortilla make this one healthy pizza!

Even though it’s the end of April, here in Denver, it’s snowing of course!! But, I’ve been trying to shed that winter weight and gear up for beach season lately, especially since I have 2 trips to San Diego coming up in the next two months!! I started running, and it’s a miracle, I actually am starting to like it! I’m proud to say in the last two months I’ve lost a solid 7 lbs! Along with running I’ve been strict about my diet and my calorie intake. Which, for a foodie, can be really challenging!

I’ve tried to focus on eating clean and fresh ingredients. But let’s face it I would get really sick of eating grilled chicken and plain veggies all the time. So I’ve been trying to get creative. Besides, everything in moderation! I decided to post this light and warm weather inspired dish today to deter my mind from the fact that it looks like December out there!

I came up with this one when I was craving a fresh form of pizza. I decided to use a tortilla for the crust because it would be way less calories. I personally love buying the uncooked tortillas and I baked it so it puffed up and became crispy! But you can definitely use any tortilla you like. I added fresh veggies and basically it turned into a salad/pizza. But it was delicious, light and filling! And you can easily sub out the veggies and toppings to your preference. Plus it’s so insanely easy and fast to make! This, along with most of my recent posts, is a great and healthy alternative while trying to lose some weight but still enjoy my food!

The Innards:

  • 1 Tortilla
  • 1 TBSP Pesto
  • fresh Arugula
  • Sliced Cucumber
  • Shaved Carrot
  • Sliced Red Onion
  • 1 slice Proscuitto
  • 1 oz Goat Cheese

Cook Time: 15 minutes

Serves: 1

Calories per pizza: 360, Fat: 19, Carbs: 36, Protein: 20

How to make it:

1. Since I buy uncooked tortillas I placed them in a 350 degree oven for about 10 minutes until they were fully cooked and golden.

2. Spread some pesto on the tortilla, then add all of your toppings, it’s simple as that!
