A surprisingly healthy layered casserole full of mexican flavors!
I mean, if you like tacos, why not eat them in a cheesy pile with a fork instead of having everything fall out the sides? Just sayin.
Cinco de Mayo is coming up and who doesn’t want to celebrate with some delicious mexican food?! Well, I’ve been wanting to make a mexican “lasagna” for a while and decided this would be the perfect time!
It’s not quite as big of an indulgence as I expected either! It has so much flavor, and using ground turkey and all the veggies in it are great! Of course the tortillas used and the cheese aren’t exactly perfect on a diet, again, all in moderation, but it’s still a less than 500 calorie dish! So I thought it was a more healthy but still indulgent option Cinco de Mayo, thus it is included as a Fit Foodie Recipe! Also you could just use two tortillas if you like to cut some calories, I just felt like the casserole held up better with four.
Since tortillas are round, I made my life easier by using my round casserole dish, but if you wanted to make a bigger dish or use a square or rectangle dish just cut your tortillas into strips or squares.
The Innards:
- 4 Tortillas
- 1/2 lb lean Ground Turkey
- 1 1/2 cup Mexican Cheese Blend
- 1/2 cup Green Chiles
- 1/2 of 15 oz can diced tomatoes
- 1 1/2 cups Corn
- 1/2 Red Onion
- 2 TBSP Chili Powder
- 1 TBSP Cumin
- 1 TBSP dried Oregano
- S + P
Prep Time: 15 minutes
Cook Time: 30 minutes
Serves: 6 people
Calories per serving: 470, Fat: 20, Protein: 26, Carbs: 45
How to Make Mexican Lasagna:
1. Place your ground turkey in a deep skillet with all of your spices on medium heat.
2. Preheat your oven to 425 degrees.
3. Let the meat brown for about 7 minutes, and add the green chiles and tomatoes.
4. If you are using frozen corn, cook it first and drain it, then add it, if it’s canned just drain and add it to the meat. Cook another 5 minutes.
5. Remove the meat mixture from the heat and add in your diced red onion.
6. Put a layer of the meat mixture in the bottom of your casserole dish.
7. Layer two tortillas on top of each other and then half the cheese over the meat.
8. Add another layer of meat mixture, then the last two tortillas and top with the rest of the cheese.
9. Cook covered in the oven for 30 minutes. Cook uncovered an extra 5 if you like your cheese extra crispy.
10. Let stand for about 5-10 minutes.
