Green Chiles and Chorizo give this frittata some Mexican spice!
I’ve become slightly obsessed with making frittatas lately. You’ll definitely start to notice in my posts. That’s because I’m on a health kick for summer and frittatas are a great way to get a low calorie meal with tons of flavor! You can really make them with pretty much any flavors or ingredients you want!
Sometimes I flip my frittata’s to cook both sides but I went out and bought an awesome new oven safe non stick skillet so I can just finish it off in the oven without having to flip it, and can avoid the risk of flipping it onto the floor!
This version is Noah’s particular favorite and it really is a good one. Granted, it might be a little heavier on the fat content with the chorizo and cheese but otherwise it is a great low calorie way to indulge in a mexican food craving! They are great for breakfast, lunch or dinner! I make them ahead and take them to work because they are so easy to pack!
The Innards:
- 2 Whole Eggs
- 2 Egg Whites
- 1 Russet Potato, shredded
- 1/2 lb Chorizo sausage
- 1/4 cup Low Fat Milk
- 1 cup Mexican Blend cheese
- 1/4 cup Green Chiles
- 1 cup diced Tomatos
- 1 bunch of Green Onions, chopped (about 6)
- 2 tsp Cumin powder
- 1 tbsp Oregano
- S+P
Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 6
Calories Per Serving (1/6): 300, Fat: 17, Carbs: 15, Protein: 17
How to make it:
1. In a large nonstick skillet on medium high heat place your chorizo and cook for 5 minutes until the sausage begins to brown.
2. Add the shredded potato and cook another 5-7 minutes.
3. In a medium size bowl beat your eggs and mix in the milk, cheese, green onion,green chili, tomato and spices.
4. Add the egg mixture to the skillet with the potato and chorizo and spread it all around so everything is evenly distributed.
5. Let cook for about 10 minutes, shaking the pan occasionally to make sure the frittata doesn’t stick to the bottom.
6. To brown the top, place in the oven under the broiler for about 2-3 minutes and watch closely as not to burn it.
When it’s all done it should slide right out of your pan which will be really hot!
