Whiskey Glazed Pistachio Roast with Parsley Herb Butter

An Irish inspired beef roast for St. Patty’s Day!

I’ve been thinking about what to make for St. Patrick’s Day for a while, but I’ve been so busy between work and school that I’m just barely getting these posts up in time!

This one will be a double feature! I wanted to make a healthy but St. Patty’s inspired meal! I figured beef would be a suitable main event since it seems to be abundant in Irish cuisine. I wanted to have something green in all of my dishes, which is where the pistachios come in. It helps that I’ve been wanting to pistachio crust beef since I had a pistachio crusted filet a few years ago at restaurant in Whistler, BC. Yeah,  I remember specific dishes from years past, I’m a fatty, or a foodie. Take your pick.

Anyhow, I bought some Jameson for another post I will be sending your way, and thought, why not whiskey glaze the roast, it might help the pistachios stick to the beef? And, whether it really helped or not it added a nice sweet flavor! I was also really wanting to incorporate parsley because of how green it is, and somehow decided it would be best to make a parsley butter to put on top of the  beef! I think this dish turned out absolutely wonderful! It’s elegant, and yet perfectly festive for the holiday!

What’s even better is, it really wasn’t complicated to make! You can probably tell by the photos that I barely like my beef cooked, or well medium rare. What can I say? I want to taste all the juicy flavor! But, by all means if you like your beef much more done add about 10 extra minutes for medium, 20 for medium well, etc.

The Roast Innards:

  • 1/4 cup Irish Whiskey
  • 1/2 cup Agave
  • 1/4 tsp Cayenne Pepper
  • pinch Nutmeg
  • S+ P
  • 1-2 lb Beef Sirloin
  • 1 cup Pistachios, chopped
  • 4 TBSP butter, softened
  • 1/4 cup fresh Parsley, chopped
  • 1 clove Garlic, minced

Prep Time: 15 minutes

Cook Time: 35-45 minutes

Calories per Serving with Parsley Butter (5oz slice or 1/6 roast):

Cal: 330, Fat: 16, Carbs: 14, Protein: 19

How to make it:

1. Preheat the oven to 400 degrees.

2. In a small sauce pan on the stove, reduce the whiskey, agave, nutmeg, cayenne, salt, and pepper at a simmer for about 10-15 minutes.

3. Meanwhile, roughly chop up your pistachios on a surface that you can roll the beef in them.

4. When your whiskey glaze has reduced and thickened a bit spread it all over your roast.

5. Roll your roast in the chopped pistachios trying to cover all of the outside.

6. Place in a baking dish and bake for 30 minutes for medium rare, longer if you want it cooked more.

7.  While your roast is cooking, take your room temperature butter and whisk the parsley, garlic and some salt in pepper into it.

8. Form as many balls as TBSP butter you used, and place them in the fridge until your roast is cooked.

9. Let your roast rest 15 minutes before cutting into it.
